RETORT is a pressure vessel used in the food manufacturing industry to “commercially sterilize” food after it has been placed into a hermetically sealed container. Heating to approximately 121 °C, intended to destroy pathogenic organisms that may be present in the container or food product. Food includes beverages, ready-to-eat (RTE) foods in shelve stable conditions.

METCAL Validation is an independent Thermal Process Specialist. We offer assistance to customers of Low Acid Canned Foods (LACF) and Acidified Foods by establishing and validating retort process procedures for producing safe food products. Ensuring retort operates properly during come-up, cook and cooling phases through Temperature Distribution (TD) test. Formulas are then calculated and applied to determine the heating rate through Heat Penetration (HP) test.

Retort validation report comply to U.S. Food and Drug Administration (FDA) – canning regulation.
